I am teaching in the field of Nutrition and Food Science. My area of research is the evaluation of the content of bioactive compounds in plant foods and the study of their health effects. Currently, I am focusing in the application of nanotechnology to improve the bioaccessibility, bioavailability and functionality of bioactive compounds. The general aim of these investigations is to find a feasible strategy to protect, improve the transport and increase the stability of bioactive compounds in these systems, as well as in the food matrices in which these are contained.
