My research has been mainly focused on the development of improved analytical methods for the determination of phenolic compounds in foods, the development of in vitro and animals models to study their digestibility, bioavailability, metabolism and tissue distribution, and its application to human interventional studies. My research is now more focused on the microbial metabolism of bioactive compounds and its implications in the prevention of chronic diseases such as cardiovascular diseases.
