Research
I develop and validate different analytical methods for the determination of antioxidant (bioactive) compounds in different food samples and food ingredients; and other bioactive compounds, such as -glucans Āin flour samples and dipeptides (carnosine and anserine) in chicken broth samples. I also develop and validate analytical methods for the determination of bioactive metabolites in biological samples (blood, plasma, serum, lipoproteins, urine, faeces,…), with the aim of determining food intake biomarkers. Then, these analytical methods are applied to human interventional studies for the validation of health claims. The developed methods are based on ultra-high performance liquid chromatography coupled to tandem mass spectrometry (UPLC-MS/MS).
