My research is aimed at ensuring the safety and quality of plant-based foods, with a specialization in the control of Listeria monocytogenes, using physical and chemical treatments as alternatives to chlorine or through the use of biocontrol agents such as antagonistic microorganisms, bacteriocins, or bacteriophages. In parallel, I work on the design of strategies to control juice spoilage caused by Alicyclobacillus.
