My research focuses on the quality and microbiological safety of fresh, minimally processed, and processed fruits and vegetables. It includes both spoilage microorganisms and foodborne pathogens, whose incidence I study as well as the factors that influence their survival and growth. I also investigate alternative strategies to improve the microbiological quality and safety of these products, using alternative disinfection techniques and emerging technologies such as UV-C radiation and biopreservation.
