My research area is the evaluation of the content of bioactive compounds in plant-based foods and the study of their effects on health. I am currently focusing on the application of nanotechnology to improve the bioaccessibility, bioavailability and functionality of bioactive compounds. The overall aim of this research is to find a feasible strategy to protect, enhance the transport of and increase the stability of bioactive compounds in these systems, as well as in the food matrices in which they are found.
