Her research focuses on the development and production of functional ingredients and foods, studying processing technologies and their impact on technological and sensory properties. Her work centres on studying the matrix effect with various processing technologies (enzymatic treatments, precision fermentation, extrusion) with the aim of developing new minimally processed foods that are rich in nutritional density and sensorially acceptable to the population.
