Pathogenic bacteria and fungi transmitted through food pose a significant challenge to food safety and quality, especially in climate change scenarios that can favour their growth and, in the case of fungi, intensify the production of mycotoxins, substances that are toxic to both humans and animals. My research focuses on optimising biopreservation strategies to mitigate microbial behaviour and mycotoxin production, using predictive models to support microbiological risk assessment throughout the food chain.
