My research focuses on the field of mycotoxins, biogenic chemical contaminants found in food and feed. Specifically, in recent years I have studied the ecophysiology of toxigenic moulds, the effect of food processing on toxins, systems to mitigate or prevent their presence (such as NIR-HSI) and decontamination methods, with particular attention to the use of adsorbent compounds.
