- Novel Technologies for Food Processing
My research interests focus on the development of safe, healthy and practical food products without sacrificing their freshness characteristics, thanks to emerging non-thermal processing technologies (pulsed electric fields, pulsed light, ultrasound, cold atmospheric plasma). It is of great interest to understand the mechanisms and kinetics involved in the impact of these technologies on food safety, quality and functionality as a basis for the development of innovative processes and products. I am currently studying the feasibility of using non-thermal food processing technologies to design processing and storage strategies that allow the production of plant-based products with a higher concentration and bioavailability of their bioactive compounds.
